Coffee you can trace.

A mobile café serving Saratoga with ingredients we can name — raw local honey instead of syrup, grass-fed A2 milk, and specialty beans ground seconds before they're brewed.

It's what's inside the cup that matters.

Most coffee is three things nobody asks about: syrup, commodity milk, and beans of unknown origin. Here's what's in ours, and why.

Raw local honey, never syrup

We infuse raw local honey with real vanilla, cinnamon, cardamom and cocoa at four to six times normal strength, and finish drinks with it instead of steaming it. More flavor from natural sweetener.

Whole A2 grass-fed milk, low-temp pasteurized

Whole A2 grass-fed milk from Family Farmstead — low-temperature pasteurized, so more of what was in it is still in it.

Purified and remineralized water, plastic-free service

Eliminating microplastics from our beverages, one cup at a time. Our water is purified, then deliberately remineralized, and every cup and lid we serve is compostable and plastic-free.

I went to Florence to learn this properly.

I spent a week at Espresso Academy (opens in a new tab) in Florence earning an SCA (opens in a new tab) certification — brewing, green coffee, roasting, café management. What I actually brought back was the ethos. Italian coffee culture is built on simplicity, hospitality, and slowing down long enough to enjoy something small. That's what I'm trying to hand across the counter.
